Blueberry Almond Lemon Loaf

It's already mid November! This month simultaneously felt incredibly long and also flew by. After much relief that the election results are finally out (congrats Joe Biden and Kamala Harris!!), I am feeling a bit more hopeful and inspired about the future. In that vein, I am also already thinking about the Thanksgiving menu... In the meantime, here is a fun and easy recipe that Will and I made earlier this fall.

This blueberry almond lemon loaf is another NY Times Cooking recipe. I know, I know - I practically live on the NY Times Cooking website. But it's just so good! This one was easy to make dairy-free as I just substituted vegan butter for regular butter. I love the combination of blueberry, almond, and lemon flavors. I think they perfectly balance each other out so that you have a loaf (or let's be honest - a cake) that is tangy and comforting, but not too sweet.

I'll be honest, Will did most of the heavy lifting on this recipe. I mostly just sat at the counter giving orders. However, I think that demonstrates some of the beauty of this recipe! There aren't any complicated techniques so it is good for beginning bakers and can be a fun partner baking recipe.
Most of the time I am quite easy-going and happy to sit back and let others take charge, but I find that in the kitchen I can be quite bossy! As I've grown more comfortable and adept at cooking and baking, I've definitely become more confident in delegating and correcting things if I want them done a certain way :)

This blueberry almond lemon loaf is super quick and simple, ideal for beginning bakers. The lemon icing tastes a lot like the icing on the legendary Starbucks lemon loaf, one of my favorite chain treats ever. This loaf is best served warm, though do make sure that you let it cool properly before adding the lemon icing (we chilled ours in the fridge to speed things up).
I would say this is the perfect afternoon snack as you debate which is the better Thanksgiving side: mashed potatoes or stuffing? (Mashed potatoes of course!)
