Banana Nut Oatmeal Bowl

Happy Mother's Day! I hope that you have been able to spend some time (in person or remotely) with your mother and/or loved ones today. We had a lovely Mother's Day breakfast this morning consisting of lemon ricotta pancakes with blueberry compote, and a frittata with fresh chard (from our neighbor's garden) and bell pepper (my mom's favorite vegetable).


For today's blog, we've got another one of my oatmeal bowls. As you know, I am an oatmeal fanatic. If you missed my ode to oatmeal and my PB & J oatmeal bowl, check it out here. The key to oatmeal is mixing it up; many people think oatmeal is boring, but that's just because they're always eating it the same way! Here is another easy oatmeal bowl to whip up for breakfast. I like this one because the banana adds a natural sweetener and makes the oats super creamy!

Ingredients

  • Whole rolled oats

  • Salt

  • Water

  • 1 banana

  • Walnut pieces (or different nut of choice)

  • Flax seed

  • Nut butter of choice


Step 1: Cook the oatmeal

In a small pot add 1 cup water, 1/2 cup oats, and a pinch of salt. Bring to a boil, then turn to low and simmer.


Step 2: Cut and mash banana

While the oatmeal is simmering, take your banana and cut 2/3 of it off. Take this portion and mash it with a fork. Add it to your simmering oats and stir until thick and creamy.

Meanwhile, take the last 1/3 of the banana and cut it into thin slices.


Step 3: Assemble the bowl

Once your oatmeal is to your desired creaminess, pour into a bowl. Top with the banana slices, flax seed, walnut pieces, and a dollop of nut butter if desired.

All done!

Now it's time to dig in to your banana bowl. I love this way of making oatmeal because of how creamy the oats get from the mashed banana. For extra-creamy, extra-sweet oats, you could mash the whole banana - I just like adding slices on top for aesthetic :)


You can also play with the toppings and add/substitute things you like. I've been getting into adding flax seed to things whenever I can because they are sooo good for you!
